Pollo con le Cipolle (Chicken with Onions)


It is a very simple recipe given from my mother in low Nadia. She told me to prepare it and try it out. I didn't wait long. I prepared it during one of our Monday's Buffet and it was great. Our customers really enjoyed the idea and some of them ask me the recipe. Here we are:
1) One Chicken cut in to pieces;
2) Three big red onions cut in to slices;
3) Extra Vergine Olive Oil;
4) Salt.

Once you cut the chicken in to pieces, you have to remove the skin but don't be so precise, if some of the skin can't come out leave it, it will help during the cooking process to produce a nice sauce.

If the chicken is only one you can proceeding using a pan fried and cook it on your gas cooker; but in case you have many chickens (as I had) you can use a oven tray and cook in the oven.

Put a bit of quantity of olive oil in the pan fried, when the oil is ready add your chicken in peaces give a first round of salt and cover them with onions.
Now you reduce the fire and cover it with the pan lid.
Leave the chicken cooking slowly without turning or shuffling.
After 45min open the lid and mix the chicken with onions. Adjust the salt, dry up the liquid if necessary and serve it.

Your Chicken & Onions is ready.

Simple, easy, and not too much attention required.

P.S. Don't cut the onions very thin but leave them slightly bigger. This will allow you to avoid being consumed to much during cooking!

Rum Baba'

A Rum Baba' or baba au rhum is a small yeast cake saturated in liquor, usually rum, and sometimes filled with whipped cream or pastry cream. It is most typically made in individual servings (about a 2" tall slightly tapered cylinder) but sometimes can be made in larger forms similar to those used for Bundt cakes.
Today I was serving this fantastic cake at the Pomodoro Monday's Buffet 
in Village Market, Nairobi.
Try it out! 

Ingredienti:

6 uova

1 cucchiaio di zucchero

1 cucchiaino di sale

25 gr di lievito di birra

100 gr di margarina

400 gr di farina 00


Ingredienti bagno:

500 ml di acqua

250 gr zucchero

1 buccia di limone

250 ml rhum


Procedimento:

In una ciotola molto ampia mettete le uova, lo zucchero, la margarina ( mi raccomando non utilizzate il burro), il sale e il lievito di birra.


Con uno sbattitore lavorare il tutto per una decina di minuti.

Aggiungere ora la farina setacciata e continuate a lavorare l’impasto


Lavorare l’impasto del babà fino a che diventi elastico e si stacchi completamente dalle pareti della ciotola.


Imburrate ora la teglia per il babà e disporre l’impasto al suo interno in modo omogeneo.


Lasciar riposare con un coperchio posto sulla superficie della teglia per 3 ore circa fino a che l’impasto non sarà arrivato ai bordi della teglia


Trascorso il tempo di lievitazione, infornate in forno già caldo a 220° gradi per 30 minuti.

Il baba’ sarà pronto quando la superficie e la parte interna dello stampo saranno dorate.


Nel frattempo preparare il bagno facendo bollire per 20 minuti circa l’acqua e zucchero con una buccia di limone tagliata a spirale .


Quando lo sciroppo sarà pronto, aggiungere il Rhum.


Bucherellare tutta la superficie del babà con uno stuzzicadenti


Versare lo sciroppo al rhum sulla superficie del babà con un mestolo.


Inclinare lo stampo e far fuoriuscire lo sciroppo in eccesso e con quello continuare a bagnare il babà ripetutamente fino a quando il dolce lo assorbirà tutto.


Lasciar riposare il babà 2 ore in frigo prima di capovolgerlo su un piatto da portata e servirlo guarnito con della panna montata.

Spaghetti alla Carbonara

Like most recipes, the origins of the dish are obscure, and there are many legend about it. We like to believe that it was created by " Carbonari" (charcoalmen), an Italian secret society. 
Recipes: Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished so the heat of the pasta cooks the raw eggs in the sauce.
In a pan place the Guanciale (Italian Bacon), saute' for about 3 minutes, until the bacon is crisp and the fat is rendered. Beat the eggs (1 each 100g spaghetti), the parmigiano and the black pepper together in a mixing bowl, stirring well to prevent lumps.   Add the hot, drained spaghetti to the pan and toss for 2 minutes to coat the strands in the bacon fat. Take out the spaghetti & bacon from the pan, to the bowl with the beaten eggs; whisking quickly until the eggs thicken but not scramble. Season the carbonara with several turns of freshly ground black pepper and Parmigiano cheese. Taste for salt. Pass more cheese around the table!

Prawns with zucchini!

For 2 people;
Easy to make it!

6 big fresh Prawns
Garlic
Olive Oil (Extravergine)
Parsley
Salt
Zucchini 
Cognac
White wine

Clean the Prawns dust them with flour. Cook them in a pan with olive oil garlic, red cili and salt. Add Cognac and 1/2 glass of white wine. Cook for 6/8 minutes. Keep them worm. Prepare the zucchini. Fried olive oil and onions. Add zucchini and a bit of white wine. Don't cook tooo much. A "filo d'olio" (olive oil on top the prawns) ..and.. serve It.
