It is a very simple recipe given from my mother in low Nadia. She told me to prepare it and try it out. I didn't wait long. I prepared it during one of our Monday's Buffet and it was great. Our customers really enjoyed the idea and some of them ask me the recipe. Here we are:
1) One Chicken cut in to pieces;
2) Three big red onions cut in to slices;
3) Extra Vergine Olive Oil;
4) Salt.
Once you cut the chicken in to pieces, you have to remove the skin but don't be so precise, if some of the skin can't come out leave it, it will help during the cooking process to produce a nice sauce.
If the chicken is only one you can proceeding using a pan fried and cook it on your gas cooker; but in case you have many chickens (as I had) you can use a oven tray and cook in the oven.
Put a bit of quantity of olive oil in the pan fried, when the oil is ready add your chicken in peaces give a first round of salt and cover them with onions.
Now you reduce the fire and cover it with the pan lid.
Leave the chicken cooking slowly without turning or shuffling.
After 45min open the lid and mix the chicken with onions. Adjust the salt, dry up the liquid if necessary and serve it.
Your Chicken & Onions is ready.
Simple, easy, and not too much attention required.
P.S. Don't cut the onions very thin but leave them slightly bigger. This will allow you to avoid being consumed to much during cooking!
